Biscuit and Gravy Breakfast Casserole

This recipe has been a favorite of our family’s for a while now.  It’s fast and easy and the whole family loves it.  This will be what we will be making for Christmas morning breakfast this year.  YUM! 

Ingredients:
1 package of sausage your choice
1 package of Pioneer Brand Peppered Sausage Gravy Mix
1 cup Cheddar Cheese
6 eggs
1/2 cup milk
Salt and Pepper
1 can Pillsbury Grand’s Biscuits


Directions:
Preheat oven 350 degrees.
Spray a 9×13 pan with non-stick cooking spray.
Cut the biscuits into 1″ pieces and place in bottom of pan.
Brown the sausage and place over biscuits.
Sprinkle with Cheddar Cheese.
Whisk eggs and milk with a pinch of salt and pepper and pour it over the pan.
Make Gravy mix per package directions and pour over sausage and cheese.
Bake in the oven for about 30-45 minutes.

Breakfast Pizza

IMG_4649A lot of Saturday mornings, especially on the ones that Brad is able to be home, we like to cook a big breakfast.  Usually we just do the usual of scrambled eggs and sausage or pancakes.  This past Saturday, I thought I would try something different.  I looked up recipes and found this one on this website for Breakfast Pizza.  I made a few changes to mine that are different from the one listed on the website. It was a big hit and everyone loved it! 

  • 2 packages (8 ounces each) refrigerated crescent rolls
  • 1 pound bulk pork sausage
  • 1/2 medium onion, chopped
  • 1 envelope country gravy mix
  • 6 eggs
  • 2 tablespoons milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 2 cups (8 ounces) shredded cheddar cheese
  1. Separate crescent dough into 16 triangles and press into a bar pan.  Bake at 375° for 11-13 minutes or until golden brown.
  2. Meanwhile, in a large skillet, cook the sausage and onion over medium heat until sausage is no longer pink; drain.
  3. Prepare gravy according to package directions.Add the prepared gravy sausage mixture and stir until combined; set aside.
  4. In a small bowl, whisk together the eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set.
  5. Spread gravy mixture over prepared crust. Top with eggs followed by cheese. Place in the oven for a few more minutes until eggs are set and cheese is melted.
  6. ENJOY!

Velda’s Pumpkin Muffins

A couple weeks ago my Mother-in-law gave me this recipe and said I should try these sometimes.  I did. Oh my, these are so yummy and moist!  It’s really hard to just eat one.  Enjoy!
  • 18 oz. yellow or spice cake mix
  • 15 oz. can of pumpkin (not pie mix)
  • 2 tbs. oil
  • 1 egg
  • 1/4 to 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 1/2 cup raisins or more if you want
Mix this all together, put in muffin pans, and bake at 350 degrees for 18 to 22 minutes.  You could also put white chocolate chips in instead of raisins.

Sticky Bun Breakfast Ring–A Busy Mom’s Recipe

IMG_3249My family loves monkey bread but it’s a little time consuming and since this Mommy doesn’t have a lot of time these days, I’m always looking for easy and quick recipes.  I ran across this recipe on facebook last week.  I tried it one morning and it is so easy, quick and DELICIOUS!!!
 
  • 2 small tubes refrigerator buttermilk biscuits OR 1 tube Pillsbury Grands buttermilk biscuits
  • 3 Tbsp. butter melted
  • 1/2 cup pancake syrup (any brand you like)
  • 1/3 cup packed brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup chopped almonds (optional)

Spray a fluted pan with non-stick spray.  Combine the melted butter and syrup in a small bowl and set aside.  In another bowl, combine the brown sugar, cinnamon, and nuts (if desired).  Place about half of the syrup mixture in the bottom of the pan.  Then sprinkle half of the brown sugar mixture on top.  Lay the biscuits on the bottom of the pan, overlapping edges (closely together) to form a ring.  Top with remaining syrup and sugar mixtures.  Bake at 375 degrees for approximately 20-25 minutes or until golden brown.  Cool for 1 minute in the pan, then invert onto a serving platter to enjoy!

No Yeast Mini Cinnamon Rolls

I don’t touch recipes with yeast in them!  I’ve had very bad results anytime I have!  I leave those recipes for my brother David. :)  Recently I found a recipe for mini cinnamon rolls that doesn’t call for yeast.  I was so excited!  I’ve made these like a 100 times already because my family LOVES them and they only take about 5 minutes to make. 
  • 1 tube of crescent rolls
  • 3 T. Butter
  • 1/4 cup sugar
  • cinnamon
  • 1 Cup Powdered Sugar
  • 1/4 tsp. Vanilla
  • 2 T. Milk
Roll crescent rolls out in big rectangle.  Brush on melted butter.  Sprinkle sugar and cinnamon on top.  Roll up and slice into 1/2 inch pieces.  Place each round piece in small round pan up against each other.  Bake on 350 for about 15 minutes or until browned.  Mix powdered sugar, milk and vanilla together and spread on top of hot cinnamon rolls.  Enjoy!

Ham and Egg Cups

DSC03845If you want a fast and easy meal for your family…then you will want to try this!  Our family loves these for breakfast or for supper. 
  • 12 eggs

  • 12 slices of ham

  • shredded cheese

  • salt and pepper to taste

Put a slice of ham in each muffin space. Crack egg and put egg on top of the slice of ham. Salt and pepper to taste and then sprinkle shredded cheese on top. Put in the oven on 350 for about 30 minutes (or until the egg is cooked). Enjoy!

Chile Rellano Breakfast Casserole

Last weekend Robin Souter made this delicious casserole for Mary's Wedding Shower Brunch. It was so YUMMY that I decided to make it this evening for supper. It is so easy, doesn't take long to bake and is so fluffy. It was a big hit with my family. Winston couldn't get enough! :)
10 eggs
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
2 c. small curd cottage cheese
1/2 c. melted butter
1 lb. Jack cheese (grated) - I used mozerella
2 (4 oz.) cans diced green chilies
Beat eggs. Add flour, baking powder and salt. Beat until smooth. Add cottage cheese and grated cheese along with the melted butter and green chilies. Bake in 9x13 baking dish at 350 for about 35 minutes.

Favorite Monkey Bread

I grew up with my Mom making Monkey Bread on special occassions. It was heavenly! I recently found an easy recipe in the "Taste of Home - Simply Delicious" magazine that didn't take too long to bake and looked easy. I tried it and it is now the recipe I go to every time I make Monkey Bread.

2 tubes (12 oz. each) refrigerated flaky biscuits
1 1/2 cup packed brown sugar
1/2 cup cream
1 tsp. ground cinnamon

Cut each biscuit into four pieces; dip each piece into the brown sugar and cinnamon mixture and then arrange evenly in a 10-in. fluted tube pan coated with cooking spray. After dipping all the biscuit pieces then take the remaining brown sugar/cinnamon mixture and mix with cream. Pour over the biscuits.

Bake at 350 degrees for 25-30 minutes or until golden brown. Cool for 5 minutes before inverting onto a serving platter.
