Ranch Pinwheels

I made these recently for a family party we had at our home.  They were a big hit and Brad said later that evening, "those pinwheels were the best ones you've ever made."  So, I thought I better record the recipe so I have for the future.  YUM!

8 oz. pkg. Cream Cheese (softened)
1/2 Cup Mayonnaise
1 pkt. of Hidden Valley Ranch Dips Mix
1/2 tsp. Garlic Salt
1 Cup Sharp Cheddar Cheese
4 oz. diced green chilies
2.25 oz. can sliced black olives
1 small onion chopped
1/3 to 1/2 cup red bell pepper chopped
1/3 to 1/2 cup green bell pepper chopped
8 flour tortillas

Mix all ingredients and spread some on each tortilla.  Roll up each tortilla and wrap in saran wrap and refrigerator for 3-4 hours.  Take out of saran wrap and slice into 1 inch slices and arrange on a serving plate.  Keep refrigerated until time to serve.  Enjoy!

Red Velvet Surprise Cupcakes

I was looking for something festive to make for our annual “Happy Birthday, Jesus” party coming up.  The boys had said they wanted cupcakes this year instead of a cake so I saw the Red Velvet Cake mix at the grocery store and picked up a box.  Then while making them I remembered the cupcakes my Mom used to make all the time that had cream cheese and chocolate chips in the middle and thought that would go great with these too.  So, I added that part and then topped them some homemade cream cheese frosting.  YUM!  I also made these for Hunter’s 9th Birthday Party at school.  We called them “Boomer Sooner” cupcakes to fit his football birthday theme this year. LOL!  They were loved by all.  They would be a perfect dessert for Valentines day too. 

Ingredients:
Red Velvet Cake Mix prepared as box says

Fill each cupcake tin with batter as box directs, but don’t bake yet.  

Surprise part or filling:
8 oz. cream cheese (softened)
1/3 cup sugar
1 egg
1/8 tsp. salt
1 cup mini semi-sweet chocolate chips

Mix all together and drop a spoonful of filling mixture into the middle of each cupcake batter. 
Bake at 350 degrees for 14 minutes.  

Cream Cheese Frosting:
2 – 8 oz. cream cheese (softened)
1/2 cup butter, softened
2 pounds confectioners sugar (or however much to make it the consistency you want)
2 teaspoon vanilla

Cream together cream cheese and butter. Beat in vanilla.  On low speed, add confectioners sugar a little at a time.  Once all sugar has been added increase to medium speed until frosting is creamy.  

Frost your cooled off cupcakes and ENJOY!!!
