Sloppy Joe Casserole

I recently found this recipe online.  I tried it and it was a big success with my family.  It's very yummy, kid friendly and easy! 
1 lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1 can (15 oz) tomato sauce
1 tablespoon packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon yellow mustard
1 pouch (6.5 oz) Betty Crocker® golden corn muffin and bread mix
1/3 cup milk
2 tablespoons vegetable oil
1 egg
1 cup shredded Cheddar cheese (4 oz)

Heat oven to 350°F in 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. Stir in tomato sauce, brown sugar, Worcestershire sauce and mustard. Cook 2 to 3 minutes, stirring frequently, until boiling; keep warm.

In small bowl, stir corn bread mix, milk, oil and egg just until moistened (batter will be lumpy).
Spoon hot beef mixture into 8-inch square (2-quart) glass baking dish. Sprinkle with 3/4 cup of the cheese. Spoon corn bread batter evenly over top.
Bake 25 to 35 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle remaining 1/4 cup cheese over hot casserole.

Heavenly Pumpkin Cake

I recently saw this recipe on pinterest and tried it the other day.  YUM YUM!  It's heavenly and my boys LOVED it!  I love it because it has only a few ingredients and only takes a few minutes to make. 
1 box yellow cake mix
1 small can pumpkin puree
1 - 14 oz. can sweetened condensed milk
1 - 8 oz. tub cool whip
1/2 bag Heath Bits
Caramel Sundae Sauce
Instructions:  Pour batter into a well greased 9x13 baking dish. Bake at 350ยบ according to the directions for a 9x13 cake on the cake mix box.
Let cool for about 10 minutes after baking. Using the bottom of a wooden spoon, poke holes all over the top of the cake.
Pour the sweetened condensed milk over the cake, filling the holes. Refrigerate for 30 minutes.
Spread the cool whip over top of cake. Sprinkle on the heath bits, and drizzle caramel over top (just to your liking). Refrigerate for 3-4 hours, or overnight (best).
Notes: DO NOT USE PUMPKIN PIE FILLING. YOU MUST USE PUMPKIN PUREE IF YOU WANT THE CAKE TO BAKE CORRECTLY. The cake mix + pumpkin puree version of pumpkin cake may not be for everyone. I like it just fine, especially when it's soaked in SCM and caramel. But if you're not sure about it, feel free to substitute your own pumpkin cake recipe as the cake base. DO NOT mix together the pumpkin, cake mix, and the other ingredients on the back of the cake mix box!!!! ONLY mix the cake mix and the pumpkin puree. You must let the sweetened condensed milk soak in all the way. Letting it sit overnight will yield best results. Use the bottom of a wooden mixing spoon to poke the holes in the cake-- it's just the right size.

Texas Gold Bars

Oh my goodness! These bars are INCREDIBLE!!  I got the recipe off of pinterest and this blog.  They are so easy and so d-e-l-i-c-i-o-u-s!

1 box yellow cake mix
3 eggs
8 oz cream cheese, softened
1/2 cup (1 stick) butter, melted
4 cups (1 lb) powdered sugar

Preheat oven to 300 and spray a 9×13 dish with cooking spray. Mix cake mix, melted butter and one egg to a soft dough. Press into the bottom of the pan. Mix powdered sugar, softened cream cheese and remaining two eggs until smooth, about 1-2 mins. Pour on top of crust. Bake at 300 for 40-50 minutes until top is golden brown.

Cindy & Robin's Meatballs

When we had Remington Cindy Bartel blessed us one evening when she brought over these meatballs for our supper.  Cindy got the recipe from Robin Souter.  They were a big hit with the whole family and they are now a favorite recipe of ours.  They are also a great recipe to make ahead and freeze. 


3 lb. lean ground beef
1-12 oz. can evaporated milk
1 cup oatmeal
1 cup cracker crumbs (about 22 saltine crackers)
2 eggs
1/2 cup chopped onions
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons chili powder

Combine all the above ingredients and shape into balls. (I make 22 meatballs out of this). (Mixture will be soft.) Combine sauce ingredients and pour over meatballs. Bake at 350 until the middle tests at 165 degrees. (I put all 22 meatballs in a 9x13 glass dish and baked them one hour.)

Sauce
2 cups ketchup
1 cup brown sugar
1/2 teaspoon liquid smoke
1/2 teaspoon garlic powder
1/2 cup chopped onions

Dad's Fudge Popcicles

These have been a favorite in our family for years and years beginning with my Grandma Koehn in Kansas making them each Summer for her family.  Growing up Dad would often make these for us kids in the summer too.  This past week I had a craving for these and so Hunter and I made a batch of them.  Yum!  Hunter is hooked on them now too!  So easy and they hit the spot on a hot summer day!
1/2 Cup Sugar
1 Can Hersey Syrup
1 Cup Cream
2 Cans of Milk (Use the empty Hersey Syrup Can)
1/2 Tsp. Vanilla

Mix together and pour into 2 ice trays.  Place in freezer until frozen.  Take out at the beginning of the meal and by dessert time they will be perfect to eat as popcicles.

Hello Dolly Bars

Mom made these bars for us kids quite often when I lived at home and I have never had them since.  About a week ago, out of the blue, I thought of these and I had a serious craving for them. I made them and now this pregnant Mommy is hooked.  They are so easy, fast and delicious!!!
1/2 c. butter
1 c. graham cracker crumbs
1 (6 oz.) pkg. (1 c.) semi-sweet chocolate chips
1 (6 oz.) pkg. butterscotch pieces
1 (3 1/2 oz.) can (1 1/3 c.) flaked coconut
1/2 c. chopped nuts
1 (15 oz.) can (1 1/3 c.) sweetened condensed milk


Melt butter in 13x9x2 inch pan. Sprinkle crumbs evenly over butter, then add next 4 layers in order given. Pour condensed milk over all. Bake at 350 degrees 30 minutes. Cool; cut in bars.

Melt in Your Mouth Chicken

I needed something quick for supper tonight.  I saw this on pinterest on this website.  It is some of the best flavored and most tender chicken I've ever made.  I added an ingredient that wasn't listed on the pinterest recipe..BACON.  I sprinkled REAL BACON BITS on top.  YUM!!!  My hubby loved it too!!!
Directions:
  1. Mix mayonnaise, cheese and seasonings.
  2. Spread mixture over chicken breast and place in baking dish.
  3. Bake at 375°F for 45 minutes.

Peanut Butter Brownie Cups

In search for something different to make for Hunter's 4th birthday party I came across these on www.pinterest.com.  They were a big hit at Hunter's party and I will definitely be making them again.  They are a perfect size for children.
Makes 40 brownies as adapted

1 box of your favorite brownie mix
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
3/4 cup creamy peanut butter


Preheat oven to 350 degrees. Spray or grease 40 mini-muffin cups.

Prepare boxed brownie mix as directed. Spoon batter evenly into muffin cups (about 1 heaping teaspoon). Bake for 13-15 minutes or until top is set and a toothpick inserted into center comes out slightly wet. After brownies are out of the oven, wait for centers to fall. This will happen upon cooling. If not then tap the centers with the back of a teaspoon to make a hole for the peanut butter.

Note:  You could do so many variations on this recipe.  For filling variations other than peanut butter you could use, cream cheese mixture, cherry pie filling, reeses peanut butter cups, chocolate kisses, etc.
